Bean and Corn Salsa

 I see recipes for this all the time and just ignore them.  This never looked like something I wanted to try.  Boy was I missing out!  Recently my husband ordered this in a restaurant and since I was hungry, I tried it.  Theirs was good, this is terrific.  If you need a good dish for the 4th, make this.  Your guests will be very happy!
Drain 1 can of black beans and 1 can of pinto beans and throw them in a bowl.  Add a bag of corn.  Dice 3 jalapenos, 3 stalks of celery and a couple tomatoes.  Add 1 can of diced green chilies with their liquid.  Add a bunch of chopped fresh cilantro and 8 sliced green onions. In a separate bowl, squeeze the juice of 3 large limes, 2 T. red wine vinegar, 3-4 T. honey(depends on how much juice you get out of your limes), 1/3 C. olive oil, 1 tsp. chili pwd., 1 tsp. cumin, 1 tsp. salt and 1 T. tomato paste.  Whisk together, taste and adjust seasonings if needed.  Pour it over the bean mixture and toss to coat. Let this sit for about 30 minutes, tossing occasionally.

 Serve it with tortilla scoops.  This is extremely delicious!
