Rye Berry Salad Recipe

This is a very good salad to make on a hot day.  The rye berries are cooked much like steel cut oats.  I made rye berry bread which I will show later.
 Mix 2 cups of cooled rye berries with 3 ounces of goat cheese, some sliced kalamata olives, a small minced onion, diced tomatoes and 1 sliced jalapeno.

 Add some fresh basil too.  Mix the juice of 1 lemon with 3 tablespoons of olive oil, S&P and 1 tablespoon of honey.  Mix this all together until the cheese is combined evenly through the salad.

Very flavorful and a good way to use fresh tomatoes and basil.

I've had wheat berries, but never thought of rye berries. I'll have to give them a try.

Hmmm, I'm going to try subbing with buckwheat groats. I think the might have gluten, I'll have to double check. Looks delicious!
Everything you make looks scrumptios, but I am leaving this gorgeous salad to the cooks. It's just a wee over my head when it comes to ingredients! Ahhh..but how I wish it weren't! :)

This looks wonderful! My garden is producing more tomatoes than I know what to do with, I'm sharing them with everyone and still have a boat load. I'll definitely be trying this salad!
