Yesterday was a very big cooking day for me. I started early because the shelter serves their main meal at lunch time. When I dropped food off a few days ago, they gave me a case of stale bagels which someone donated. They didn't know what to do with them and hoped I could transform them into something. |
I stockpile ground meat when I see it on sale and this was a perfect way to use it. I made a big pot of this. I don't know what to call it but the shelter guys named these 'little peppers'. They said they taste like stuffed peppers on a bun. They have a habit of naming all of my food.
I sauteed onions, garlic and lots of green peppers, added the beef and Italian spices. Then I added tomato paste and sauce and some beef flavoring. And black olives.
I topped each bagel half with the beef mixture and covered them with provolone and mozzarella then baked them for 25 minutes.
I also made them BBQ'd chicken.
First I baked the legs.
Then dipped them in some BBQ sauce I made and baked them some more.
When they were done baking, I dipped them in more sauce.
Then loaded up the car and delivered them. The guys were really happy when I showed up.

Brilliant work for a great cause - well done!
I think I'll do something similar to what You've done with the bagels, I have some bolognese left and why not use that and make some warm sandwiches :-)
Have a great day!
Christer.
The chicken with sauce looks yummy

You are a blessing!
