Thumbprint Cookies

I always make these cookies towards the end of summer.  They remind me of returning to school.
 You can rolls them in any color of jimmies you want.

 You also can fill them with vanilla flavored confectioners sugar icing.  I made a chocolate buttercream for my guys.


 Mix 2-1/2 C. of flour with 1/2 tsp. of salt and set aside.  Cream 1 C. of softened butter with 1 C. of powdered sugar and 2 tsp. vanilla extract.  Mix in the flour mixture.  Form these into walnut sized balls and dip in egg whites and roll in the jimmies.  Press your finger into the middle of each cookie.  Bake at 350 degrees for about 18 minutes.  They should not brown.  Cool on racks before frosting.

For the frosting, beat 4 T. butter with 1-1/2 C. of powdered sugar and 1/3 C. of cocoa powder.  Add 4 T. of milk and 1 tsp. of vanilla extract.  Beat until smooth and fluffy.

I made them a second time and filled them with dark chocolate ganache.  Either way, they are very good.

well I learned something new!! I make thumbprint cookies but ours are rolled in chopped walnuts and indented then jelly filled in the dent, then baked.I will now make these that you have shown us, my grand children will love them!!!!!!
Yeah, I could eat a coupla dozen of those, easy. At one sitting, I mean.
The cookies look..wonderful but I would never, EVER be able to eat only one of them. Five pounds immediately on the rear end!! Yes, indeed! :)

I have to try your different fillings. I always rolled mine in crushed walnuts and filled with raspberry preserves. I never thought of jimmies too!
