1-1/2 C. sugar
1-1/2 tsp. baking soda
1 T. cocoa powder
1 tsp. cinnamon
1 tsp. salt
1 tsp. nutmeg
1 tsp. allspice
Mix the dry ingredients together and set aside.
1/2 C. vegetable oil
2 C. apple sauce
2 eggs
Beat this in a bowl and gradually add the dry ingredients.
Mix in 1 C. of raisins.
Pout the batter into a greased 9X13 pan and bake at 350 degrees for about 35 minutes or until a toothpick stuck in the middle comes out clean. Turn it out onto a rack and cool completely.
Frosting:
8 oz. cream cheese
4 T. butter
2 tsp. vanilla extract
2 C. confectioners sugar
1/3 C. milk
1 T. lemon juice
Beat this together adding additional sugar to get the right spreading consistency. Divide the cake in half. Spread the top of the first layer with frosting then add the second layer and cover with frosting.
I like to keep this in the refrigerator. Seriously, this is one hell of a cake!
