Savory French Toast

I came up with this idea the other day for breakfast and my family really liked it.  Savory French toast topped with an omelet.
 I sliced some of my walnut rosemary bread.

 Then I dipped it in beaten eggs.

 I diced up some cooked bacon and pancetta.  You can use any kind of meat you like or just use some vegetables.

 Cook the eggs over medium heat and sprinkle it with S&P.

 Cook the bread until golden.

 Add some thinly sliced cheese. I used a sharp cheddar.

 Sprinkle the meat over the partially cooked omelet and fold it in from both sides.

 These are the last of my garden tomatoes.  Goodbye tomatoes until next year.  I enjoyed you all so much!

 Place slices of the omelet on top of the French toast and tomatoes.

We're eating the last of our garden tomatoes tonight too. They were ripening in a paper bag and now they're ready!

My English husband likes French toast with thinly sliced onion and cheese, cooked until all is crisp and golden. Quite yummy.

Oh heck! I woke up unbelievably hungry this morning and now I'm really feeling it. I have to wait an hour after taking my thyroid med to eat and it feels like it's taking forever, especially after seeing your post! YUM!
