Italian Pasta Soup - Cure A Cold

Everyone had a case of the sniffles around here the other day so I whipped up a batch of this soup.  I'm not sure that it cured their colds but it sure made them feel better.  And the colds do happen to be gone.
 I boiled a chicken with some onions, carrots, celery, peppercorns and bay leaves in a pot of water.  After about 2 hours I strained the stock from the solids.

 I added some Parmesan rinds to the stock and cooked for another hour.  I tasted it and adjusted the seasoning and removed what was left of the rinds.

 I brought the stock to a boil and added some ditalini pasta.

Cook just until the pasta is al dente and add some diced fresh dill.            
Top with a bit of shaved Asiago cheese.  This is a very rich chicken soup and perfect for the type of weather we are having.

We always had hen soup when I grew up but I don't think they sell old hen any longer :-)

This looks perfect for the weather we're having now, cold and snowy and I think I would love it even if I for once don't have a cold :-)

Soap looks really good. I love putting cheese rind in the broths to cook for flavor.

I'd never heard of using rinds in broth before until Smitten Kitchen posted about it not long ago. Decided to start saving my rinds. Bet it makes this soup amazing!
I don't have a cold but now I'm starving! Your posts have the most wonderful effect on me. Inspire me to cook and Lord only knows I need inspiration. I thought I was through with cooking but ...not so any more. :)

We've had the sniffles too, but at least 3 different stomach bugs too. It's been terrible. I never thought about putting the parmesan rinds in soup stock. Great idea!
