I got a request to make turkey meatballs, something I rarely make. These are so good they will be a regular around here now. |
I used 5 pounds of ground turkey but I will give you the recipe for 2 pounds.

2 pounds lean ground turkey

1 cup cracker crumbs made by crushing crackers

1/4 cup grated carrots

1/4 cup grated zucchini

1/4 cup finely chopped onion (I grated mine)

2 large eggs

2 tablespoons Italian seasoning

1 tablespoon sea salt

minced garlic to taste. I used a lot.

3/4 cup chicken broth
Mix this all together until combined. I usually mix this with my hands but it was so cold in my house that I knew my hands would freeze so I used a fork. You can find these large serving forks really cheap at thrift shops and they are perfect for mixing all sorts of things. Cook a small piece and taste it and adjust seasoning if need be.

Use a small cookie scoop and place the meatballs on greased cookie sheets. Bake at 350 degrees for about 25 minutes. |
I could have taken a more attractive photo but, of course, I didn't. Remove the meatballs from the pan and scrape all of the juice and drippings to a pot. Bring them to a boil and add a bit more stock and thicken using cornstarch to make gravy. These are really really good! My kids eat them as snacks when they get hungry and want something lowfat. It's also a great way to get veggies into little kids.
