Bruschetta

With another Polar Vortex about to settle in for a week, I thought I would make something very typical of summer.  If you like bruschetta, bookmark this and make it in 4 months.
In a bowl, measure out several tablespoons of chopped fresh parsley and 2 tablespoons of diced fresh basil. I had no fresh basil so I used 1 tablespoon of pesto. Add 1-1/2 tsp. garlic salt, 1 tsp. seasoned salt, 1 tablespoon sugar, 3/4 tsp. dried thyme and 1/2 tsp. black pepper.

Whisk in 1/2 cup of red wine.

Slowly whisk in 3/4 cup of olive oil.

Add 6 chopped tomatoes.

And several sliced green onions.  Mix this together and let it sit at room temp for about 1 hour stirring occasionally.

Serve it on toasted garlic bread.

I canned bruschetta in a jar and it is surprisingly fresh tasting.

We are expecting what they are now saying will be 18" of snow. OY! That's taller than the goats' legs!

You've gotten all polar vortexes this winter! I'm happy on this side of the ocean since we've gotten none. I better enjoy it bvecause this will not happen again I'm afraid :-)

Very close to the bruschette recipes I know. One was directly from Italy, as a matter of fact, I usually mix the two of them.

Good luck with the snow again! The East Coast has just gotten killed this year. Meanwhile, it's been 50 and sunny here lately. I think we escaped the wrath of our first Polish winter!

Our tomatoes are crap right now, so I will definitely have to wait to make this yummy dish!
I remember the very first time I ever had bruschetta. It was served at this chi chi reception I attended in Toronto about 25 years ago. Loved it right away!

This sounds like something I could do.. Every Sunday, my son and his wife who own the bakery and sandwich shop "Jammin' Bread" come for dinner. We have been watching "Downton Abby" and having dinner. I've been wowing them with your recipes. She says she has made a few of them too. I wonder which ones. Gonna check and see. I will have her bring her bread from the bakery.. :) This is another first for me!
