President's Day Cherry Pie

I always make my guys a cherry pie for President's Day.  It is their favorite pie.    Or maybe not.  Each time I bake a pie, they say it is their favorite.  I think they just like pie! 
 I use 4 cans of tart cherries. Drain them and place them in a heavy pot.

 Mix 1/2 cup of sugar with 4 T. of cornstarch.

Measure out half of the cherry juice.

 Whisk the sugar and cornstarch into the juice.

 Add the juice and stir it, cooking over medium heat, until it thickens.  It doesn't take long.  Add 1 tsp. of almond extract. The cherry mixture will look sort of pink but it darkens as it cools.  Set it aside to cool completely.

 Roll out your crust and fit it into your pie pan.  Dot the tops with shavings of butter.  My lightroom has a mind of it's own and refuses to import some photos so no pic of the butter.

 Cover the top with the other piece of dough and pinch and roll the edges inward.

 Crimp the edges and decorate the top any way you like.  Cut a vent.  I cut mine right along the edges of the cherries.

 Bake on a cookie sheet covered with foil to catch any drippings.  Bake it at 400 degrees until the crust is golden and the filling is bubbling.  About 1 hour.

Mine browned unevenly.  Hmmmm...I wonder if my oven temp needs to be calibrated since the repair was done?
Let the pie cool completely before slicing.

I love cherries but have never had cherry pie! Not even when I had twenty cherry trees in my old garden :-) Tghis look so delicious so I'll make one if I can find cherries enough!

I can not tell a lie. Cherry is my favorite pie. I like the fact you use almond extract instead of vanilla.

Yum! And perfect timing for me! I do love your recipes and I just happen to have all the ingredients here on the counter to make a cherry pie for my neighbor who pulled my car out of the ditch last week!
One question, though... I'm not a huge fan of almond extract...can you taste it or is it just more of an overall flavor enhancer?

I looked at cans of sour cherries today, and they were almost $5.00 a can! There is nothing better than good cherry pie, and yours looks amazing!

Cherry pie is my favorite..nothing tops it. I always use the canned cherry pie filling but I'm going to use this recipe. I've now made two big pots of your chili..and my family LOVES it! A total hit. They empty the pot..thanks so thanks so much, Joyce! Any break in the weather back there. I heard on the news that another big ICE storm is headed East.. Good lord!! You are certainly getting your share of cold weather this year. Still none here. Lots of clouds that just sail right on over us.

This looks so scrumptious! We had a cherry tree in Chicago that bore tons of berries every year. I never thought to actually use the fruit until about 10 years before we left. Now I wish I could make a cherry pie with the fruit.
