Wonton Soup

This soup is excellent but next time I will only make enough to eat in one sitting because the wontons got a bit soft when reheated.  Actually, I think I would make the wontons from scratch because I bet they would hold up better.
 I used chicken stock I made the day before but you can just use boxed stock if you wish.  I seasoned mine with some bouillon cubes.  Add some grated fresh ginger, some sliced mushrooms, sliced cabbage, shredded carrots and sliced green onions.

 I also added some thinly sliced celery.  Add 1 T. soy sauce, 1 tsp. fish sauce and 3 T. sesame oil.

 Add noodles of your choice.  I bought frozen yellow noodles at my Asian market.

 I also added 1 tsp. of hot chili oil but you can leave it out of you don't like it to be spicy.  I added frozen wontons which I was not thrilled with.  I mean, they were okay but homemade would be so much better.


Another good soup for another freezing cold day.

I could eat a big bowl of that, no problem with leftovers. You just made me hungry for soup, dang.
I suppose you could always remove the wontons from the soup, store it and then put them back when next eating it. Perhaps that might keep them in better shape?

Yum! I sometimes like to slowly swirl a raw egg into the hot broth right at the very end before eating. You're so right about the frozen wonton situation - but sometimes it's just so much easier to use the ready made. Well, you've inspired me...just guess what I'll be making for lunch tomorrow!

I think the addition of the hot chili oil would make this exceptional. Looks like a nice hearty soup.
Sometimes..when I read your blog and you are featuring a recipe..I actually think I smell whatever it is you are cooking! You would have loved having my family. Nine people to cook for ...for years..and years..and years. I think you and my huge family would have been a match made in heaven. ALL of them love to cook. It's amazing.
Northern California got OUR rain..but at least it's in the state.. just not down our way. :(
