Zucchini Pancakes

Are you growing zucchini in your garden this summer?  This is a good recipe that I saw on Celia's blog a few days ago.  It's a good way to use some of your zukes.
 Grate 4 C. of zucchini, salt it and let it sit for about 15 minutes.  Rinse it and wring it out in a towel.

 Separate 4 egg yolks from the whites.

 Beat the whites until they form soft peaks.

 Place the yolks in a separate bowl...sorry for the glare.

 Sprinkle in 1 C. of feta cheese, I used a little less.

 Add some diced onion, about 1/2 cup.

Add some salt and pepper and a bit of mint or dill.  Mix this all together.
 Add the zucchini and 1/3 C. of flour.

 Mix this all together.

 Then fold in the whipped egg whites.

 Fry them in a skillet with a little bit of butter.

Serve them with  bit of sour cream.  These are really good and are also good eaten cold as a snack.
 I have been making a lot of these recently.  I make smoothies each morning and freeze the leftovers in zipzicle bags so my family can have healthy freeze pops.  You can buy the bags on Amazon.

No zucchinis this year but they are so cheap that I'll make these soon.

Those frozen smoothies do look yummy, must see if I can find bags like that here.

I should make these while I am still under the influence of a book on CD I read - otherwise I will decide it's too many steps - no matter how delicious they look and sound. What a devilishly clever way to save smoothie leftovers!

Perfect timing,I am trying to figure out ways to use all this Zucchini from the garden!

Who knew on the bags. Good idea on freezing left over smoothie as there always seem to be some. :O)

Mmmm, those pancakes DO look good -- almost like healthy latkes. And I've never seen zipsicle bags -- what a good idea!

Oh! This is one of my family's favorite foods. That and the tomato ones. I dry them a lot add a bit more flour and bake them, so they can be a bit healthier. We eat vast amounts of that stuff!
