A Good Old Fashioned Apple Pie

Sometimes you just need a piece of a good old fashioned apple pie.  Yesterday was one of those days.                     
 We can't get enough of our local honey crisp apples.  They are delicious and they sure make a good pie.  I sliced 5 large ones.

 I added 3 T. of flour, 3 T. of white sugar and 2 T. of light brown sugar, 1/2 tsp. salt and 1 T. of fresh lemon juice.

 I also added about 1/2 tsp. of cinnamon and a grating of nutmeg.  It's just enough to enhance the flavor but not disguise the apple flavor.

 I used my pate brisee dough.  Spray your pie plate and line it with dough.

 Fill it with your apples and dot it with butter.

 Cover with the rest of the dough.

 Crimp the edges.

 Brush it with cream.


 Sprinkle the top with cinnamon sugar.

 Bake it for 15 minutes in a 450 degree oven then drop the temperature to 350 degrees and bake it for another hour.  Place it on a cookie sheet for baking.  My little apple shrunk.

Let it cool before slicing.

It's never wrong with apple pie. I'll drive by the super market tomorrow so I'll buy myself lots of apples so I can make a pie too :-)

That actually looks quite nice, crispy and warm. Even for me who does not like apple pies much. My brother is a big fan, except that he hates cinnamon in it.

I cannot tell you how many Honeycrisp apples I have eaten in the past couple of weeks - they are the perfect combination of tart & sweet. I sure wish I could knock out a delicious looking apple pie like you do. Some people are born with the talent to make a great pie crust and others, like me - not so much. My Mom made the best pie pie crust, but mine never comes close. You pie looks so delicious, I will have to give your pastry recipe a try this weekend. Your sweet little apple decoration gives it the perfect homemade touch.

Okay! I KNOW this recipe is for me...mine..ME! :):) You read my mind, I know you did! lol I am so in love with those apples. The best I've ever tasted. Back to the store tomorrow for more.
