My daughter called yesterday and sounded horrible. She has a terrible cold and is miserable. If she had to get a cold, she timed it perfectly. I had just roasted Teddy a chicken so I took the carcass and threw it in a pot with carrots, onions, celery, garlic, peppercorns, a bay leaf and some sprigs of fresh herbs. I let it simmer for about 2 hours and then strained out the solids. I added some poultry demi glace and salt and 2 cups of rice. When the rice was cooked I added some fresh parsley. Mmmm...a good cold remedy.
And this just happened to arrive in the mail while the soup was cooking. It is a shawl I bought for my daughter from Bee Haven Acres. Look closely and you will see she knitted a band of owls all along the border.
She even gave them little glass eyes. My daughter still has her cold but she feels better wearing this around her shoulders and sipping hot soup.
