Old Fashioned Pot Roast

This is a great meal for a cold Fall day.  Serve it over mashed potatoes and you have perfect comfort food.  And it is so simple to make.
 Coat a 4 pound chuck roast with lots of salt and pepper and flour.  Place it in a hot deep pan with a bit of oil.
 Brown it on both sides until it has a crisp skin.

 Remove it from the pan and set it aside.

 Saute 1 large diced onion, 4 cloves of garlic and several sliced large carrots in the remaining oil for a few minutes.

 Return the roast to the pan and add a stalk of rosemary, 1 bay leaf and several sprigs of thyme. Add 4 cups of beef stock and a few tablespoons of beef demi glace.  Cover and braise in a 275 degree oven for 3 hours.  Remove the roast and strain the solids from the liquid. Discard the solids. Return the liquid and the roast to the pan.  Add some peeled carrots, celery and pearl onions.  Cover and cook for an additional hour until the vegetables are tender.

I have a pot roast scheduled for tomorrow night. Can't wait to smell up the house with garlic and onion and searing meat. Thursday night we are having chili and cornbread. Friday David leaves on his fishing trip. So I have Chinese planned for that night.

I know this is a very common food in the States but we do not have it here. Actually there are very few greek recipes for beef in the oven. I have been thinking about it recently because i was trying to think of foods for the baby.
This recipe is a bit scary to me but i think i will try it!

I can actually smell this! Seriously!
I do something a little similar with chicken breasts for the stove top. Now I will try to find a good lean roast of beef at the butcher in the city and give this a whirl. the mashed potatoes are the kicker! Thanks.

This is one of my favorite meals of all time... sometimes I fix it in the crock pot, sometimes in the oven, and many times in a Dutch oven on top of the stove!
