Creamy Potato Soup

Baby it is cold outside!  So I made some soup.  I haven't been to the store in a week and was low on ingredients but I had everything I needed to make this.  This is sort of a 'clean out your fridge' kind of soup.
Saute' a diced onion, some diced carrots and celery in several tablespoons of oil.  Add about 5 diced baking potatoes, a bay leaf and 4 cups of chicken stock.  Bring to a boil and then simmer it until the potatoes are tender.  Add salt and pepper to taste.
Mix 1 cup of milk with 3 tablespoons of flour and pour it into the soup.  Cook until it begins to thicken a bit.                                                                                                                                   


 Puree about half of the soup in a blender.  I like to keep some chunky bits in mine but you can puree it as much as you like.

 My photos are acting up today and it seems like I've lost some but before serving, I stirred in about 3 tablespoons of cream.  I served mine with grated cheddar on top but it is also good with crumbled bacon, green onions or croutons too.

I need to make my potato soup tomorrow. Our wonderful warm weather has been interrupted by a cold front that is slowly moving down into Texas.
It's so filling and it keeps me warm inside.

I love potato soup. The chunkier the better. A little crumbled bacon and green onions added would be perfect. YUM! YUM! Yours sounds delicious.

It is cold again, here, too... so I made chicken/vegetable/noodle soup last night and it is warming up again right now!

This is the BEST for winter. I did the same this past week with cauliflower and added mashed potato.
