Honey Soy Salmon Salad

This is a delicious salmon recipe which I often serve with macaroni salad on the side but it is good served just on it's own.
Make a marinade for the salmon by mixing 1/2 cup of ketchup, 1/2 cup honey 2 T. rice vinegar, 1/4 C. yellow mustard, 1 tsp. hot sauce, 3 T. brown sugar, 1-1/2 tsp. paprika, 1 T. curry pwd., 1 T. soy sauce, 3 cloves diced garlic, 1 T. vegetable oil, 1/2 tsp. worcestershire sauce, 1 tsp. lemon and 1/4 tsp. black pepper.  Whisk this together.

Add the salmon.  Refrigerate and marinate for several hours or overnight.

Make a salad using some spring lettuce and red onion slices.

Either grill or pan fry the salmon and place it on the lettuce.  Discard the marinade.
Make a dressing by mixing 2 T. balsamic vinegar, 1 T. honey, 1/2 C. olive oil, 2-3 T. diced fresh cilantro, 1 T. diced shallot or green onion and S&P to taste.  Drizzle this over the salmon.

That looks so good and I'm not even a big fish eater!

I like salmon as long as it isn't smoked or pickled and this looks just delicious! But I must admit that I rarely buy salmon, I normally buy cod or mackerel.

Have a great day!
