Blueberry Rhubarb Pie

This is a first for me. I've made too many strawberry rhubarb pies to count but a blueberry rhubarb pie?  My CSA gave me rhubarb and I had some nice blueberries and I wanted to bake a pie so why not?
I mixed 2 pints of blueberries with about 8 stalks of diced rhubarb, 1/2 cup of sugar and 1/3 cup of flour.  I also squeezed in the juice of 1 lemon.

I made my cream cheese pie crust:

Oops, I forgot a couple pics.  Mound the filling in the crust and place the other piece on top.  Roll or crimp the edges.

Brush the crust with cream or milk.

Sprinkle liberally with cinnamon sugar. Bake it at 350 degrees for an hour or more.

The pie is done when you can see the liquid inside of it bubbling.  I've baked so many pies I can tell when they are done by the smell.  I never tasted these but I was told it was the best pie anyone had ever eaten.  So, I guess blueberries and rhubarb are a good combination.

This is not a combination I would have thought of either. Very intriguing. Bet it tastes divine.
That's not a combo I've ever had either! But why not, eh?

Garry asked me how that pie turned, out, which proves HE DOES listen to me, lol,

looks amazing, I have never heard of that combo before either but for us it would be because Rhubarb and strawberries come closer in season, Blueberries are much later for us,

I will give this a try, I have blueberries in freezer and my rhubarb is coming in nicely.

I too have never heard of this combination but it sounds wonderful. We have rhubarb in the garden so when I see blueberries in teh shops, I'll try this for sure. Thanks!

Never tried rhubarb. Blueberries are on sale this week and I was thinking of making blueberry tarts.

Looks wonderful. I've made "bluebarb" jam in the past which is, of course, blueberries & rhubarb. I'm planning to make a tart this weekend with rhubarb from our garden, blueberries and raspberries.

Oh this is a match made in heaven for me! Blueberries are the emblematic fruits of my region (the Saguenay-Lac-St-Jean), I love them and I also love rhubarb.

I think that combination sounds interesting and I must buy blueberries tomorrow on my way home, rhubars I have plenty of though. I hope this mild winter we've had will give me plenty of blueberries this autumn, so far those bushes of mine haven't spoiled me :-)

Have a great day!
Christer.

Now if I recall correctly you do not care for chocolate, but pie too? A scoop of french vanilla ice cream on a large slice of that beautiful pie, a happy camper I would be!!!
