Canadian Butter Tarts

One of my kids is going to visit someone and I have taught them to never go anywhere empty handed. So, I baked and wrapped some butter tarts for them to take along.
These are some of the best things you will ever taste.  You simply line muffin tins with a good pie crust and then make this filling:
  • ½ cup lightly packed brown sugar
  • ½ cup corn syrup
  • ¼ cup butter, melted
  • 1 egg
  • 1 tsp vanilla extract
  • ¼ tsp salt
Bake at 425 degrees for about 15 minutes.  Let them cool before removing from the pan.
We are at the height of tomato season and are eating them several times a day.  One of my favorite things to do is bake a loaf of white bread.

And make tomato and mayonnaise sandwiches.  Simple but oh so good.

These Ball jars are new at Sur La Table this Fall.  We are off to one of our favorite festivals and I can't wait!

I love the owl Ball Jars!! Can you actually can in them? What a cool gift idea! I LOVE tomato and mayo sandwiches!....also love grilled cheese with a slice of fresh tomato inside its gooey center! Have fun at the festival....make sure you take pictures and post about it. I just love festivals!
We are eating everything tomato now. Hubby and I had a tomato sandwich yesterday and a tomato pie last night and there are many more left to find what to do with today, tomorrow and probably for another few weeks. Thank heaven for antacid pills.

The Butter Tarts sound as if they are a very traditional recipe? They look very good and I could use one right now to go with my cup of tea. I love tomatoes! I can eat them three meals a day, so I'll be right over!

I don't think I've ever eaten butter tarts so this is a must try when baking season starts here again. It's just too warm to even think about any kind of baking or standing close to a stove today :-) Well I shouldn't be surprised, after all I've had my vacation when it was cold and rainy :-)

Ohhhhh, tartes au sucre! I love those. They do treacle tarts in Englad, but they don't taste the same. You make me long for them, I might ask my parents to bake some when I go back home.

I used to make myself tomatoes and mustard sandwiches. I think I'd need more proteins nowadays, but I remember loving them.

My college roommate was from Canada and her mother gave me a recipe for the butter tarts. I add raisins to mine. I also make them in the mini-muffin tins. I adore them.

Buttertarts are a life long favourite. Bless you for not putting raisins in them - ugh - a pet peeve of mine.

Also of note: there is a huge party happening one street over, and I can hear the music all the way over here with my windows closed. Playing right now though... "Superstition" from Stevie Wonder. Perfect "let's get ready for October" music!
