Chocolate Zucchini Cake

If you have tons of zucchini right now and you are looking for ways to use it, this is a recipe sure to make most people happy.  Not me, I hate chocolate.  But my family loved this.

For the cake:
  • 2 cups sugar
  • ¾ cup oil
  • 3 eggs
  • 2 tsp vanilla
  • 2½ cups flour
  • 1½ tsp baking powder
  • 1½ tsp baking soda
  • ½ cup cocoa
  • 1 tsp cinnamon
  • ½ tsp salt
  • ½ cup milk
  • 2¼ cups grated zucchini


  1. Preheat oven to 325°.
  2. Grease and flour a bundt pan.
  3. In a large mixing bowl, mix sugar, oil, and eggs together until creamy.
  4. Add in vanilla, and mix until well combined.
  5. In a smaller bowl, stir flour, baking powder, baking soda, cocoa, cinnamon, and salt together with a small whisk just to blend everything together.
  6. Add flour mixture in with the sugar, eggs, oil and vanilla. Mix well.
  7. Slowly mix in the milk.
  8. After everything is well combined, stir in the zucchini.
  9. Pour into bundt pan and bake for approximately 60 minutes.
  10. Cake will be done when tooth pick inserted comes out clean.

 For the frosting:
  • 1 stick butter, melted
  • ⅔ Cup Cocoa
  • 3 Cups Powder sugar
  • ⅓ cup milk
  • 1 tsp vanilla extract
  •  
  • In a medium size mixing bowl, add melted butter. Mix in cocoa.
  • Next add in some powder sugar and then milk, then some powder sugar then milk. Repeat until all is well mixed. Mix on low speed.
  • After frosting is well blended, add in vanilla.
  • Makes about 2 cups of frosting.
  • Frost cake once cake has cooled.

 Dense moist and very chocolaty!

Look what I found at the store yesterday!  WEEEEEE!!!!  And the Almanac says we are in for a tough winter....YES!!!

Your cake reminds me of a recent comment by my son. He stopped over a few weeks ago, I had a few zucchini on the counter, my husband said " Adam do you like zucchini? ", Yes when they are in a chocolate cake, hahaha, I made six loaf size for freezer ( great freezer cake) ready for when he stops over again. Then he can have cake when he wants.

...tough winter? Bring it on!! Finally, someone who looks forward to Winter like myself. I get sooo tired of Summer heat. And, now that I think on it, I don't recall ever hearing anyone say ..."wow, the Almanac says we are in for a hot Summer, Yeah!!". Wonder why?

I must admit that I've never thought of chocolate and zucchini at the same time before :-)

It's odd but I love chocolate but not chocolate cake ( I eat it but never make one myself) or chocolate ice cream. But this looks just delicious to be honest :-) I thgink I have enough squash to spare for a cake :-)

Oh my, another cake I have to try. Goodness! I'm really, really hoping for a cold snowy winter myself, but I think ours is just cold and wet in the predictions. I was in a garden shop yesterday and they were putting out their Christmas display. They also had a nice Halloween display up already.

Cake looks great! I do like chocolate! I heard the same thing about next winter. Even out here, we are suppose to see snow. After this awful summer, snow sounds good to me.

I am excited for fall and winter too. Enough with this summer heat! I am one of the few that loves the cold and snow! Nice to see there are others just like me. I live in Massachusetts and everyone complains about the snow. I think it is beautiful! Nothing like a good snow storm!
I used to work in an office where a coworker always made lovely chocolate zucchini cakes when the zukes were ready. We all waited impatiently every year for those cakes to start rolling in!

Your cake looks so good. Funny I love chocolate but hate zucchini. When I make any recipe calling for zucchini I use Patty pan squash. I have it in the freezer year a round.
