Cinnamon Pumpkin Muffins

I made these for my workers the other day and they scarfed them down.                                                                                    

for the muffins
  • 3 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 2 teaspoons salt
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoons ground cinnamon
  • 1/2 teaspoons ground ginger
  • 3/4 cup butter
  • 3/4 cup light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/4 cups canned pumpkin
for the topping
  • 3/4 cup sugar
  • 2 1/2 teaspoons cinnamon
  • 4 T. butter melted
Line your muffin pan with cupcake liners. Mix the batter and fill them 2/3 full. Bake them for approx. 25 minutes at 350 degrees.  Test with a toothpick to tell if they are done.

 Have your cinnamon sugar and melted butter in two bowls.  While the muffins are still warm, dip the tops in the melted butter and then into the cinnamon sugar.

 They taste like donuts.

 Cool them on a rack.
 It's pumpkin season!!!

I have a donut muffin recipe similar to this but the pumpkin in this one makes it even better!!!

You do know they are going to drag their feet so they can keep eating all your yummy treats! lol But I do know what I am baking tomorrow for breakfast. Thank you!
