Butter Swim Biscuits and Taco Mac and Cheese

I cooked for the kids at the after school program each day this week.  Yesterday I made them a meal they really liked.  First I made butter swim biscuits:

2 1/2 c all-purpose flour
4 tsp baking powder
4 tsp sugar
2 tsp salt
1 3/4 c buttermilk
1 stick unsalted butter

Mix all of the ingredients in a bowl and dump them into a 9 X 11 pan in which you have melted 1 stick of butter.  Spread it out and bake it at 450 degrees for about 30 minutes until it starts to turn golden.  Remove them from the oven, score them into squares.
While they were baking, I browned some ground beef, seasoned it with salt, pepper, garlic and onion powder, cumin, a bit of chili powder and 1 can of rotel.

When the biscuits are done baking, drizzle them with honey.

Spread the beef mixture in the bottom of a slow cooker.  I like to spread some sliced green olives over it.

Make the mac and cheese of your choice.  I mixed in onion and peppers and made a taco flavored mac and cheese.  I used ziti  instead of elbow macaroni. Spread this over the meat mixture.
I also sent a basket of clementines too.

I've never had a taco tasting Mac and cheese, must try that!

I just ate my last clementine and now I wish I had stopped by the grocery store to buy some more :-)
