Hot Sausage Sandwiches

Hot sausage sandwiches are a religion in my region and I made these for the workers the other day.
 I bought some locally made hot sausage links and browned them in a heavy pot in a bit of olive oil.

 Do you prep your peppers this way? You just cut the top and bottom off and make a slit down one side.

 Just unwind it and cut along each rib.  You end up with a long strip of pepper that you can cut any way you want.

 I sliced up lots of peppers and onions.

 Then sprinkled them with pepper and salt and granulated garlic.

 I added a jar of my tomatoes which I recently canned.

Let this simmer for about 30 minutes.  I served these on homemade rolls but I forgot to take a pic of them.
