Christmas Gingerbread Cakes

With two days to go before Christmas and still having baked no cookies, I thought I better bake something Christmasy to soothe the savage cookie beasts in my family.  I thought about what is the single flavor which I most associate with Christmas and hands down it is gingerbread.  So I made them gingerbread cakes.
 I have these small spring form pans which made cakes that were the perfect size.

 It is so freaking hot here that my cream cheese icing was melting so I had to place them in the fridge to firm up.

  My spearmint is still growing right next to where my daffodils are about to bloom.  Christmas daffodils!  I used the spearmint for the holly leaves.

And a few fresh cranberries for the berries.
A dense moist gingerbread cake with sweet, creamy frosting = Christmas.

Spearmint? Daffodils? Good gawd. I think that gingerbread is my all-time favorite dessert. Have a wonderful Christmas with your lovely family (and my favorite fluffy Teddy-kins.)

Your cakes are beautiful, and I'm sure delicious.

I am laughing at your comments about the hot weather. I'm reading that on other east coast blogs, too. One fellow was complaining that he couldn't use the patio as a freezer and the garage as a refrigerator and the actual appliance in his kitchen was overflowing with Christmas food prep. Yes, welcome to my world in California. However, we are having cold weather here and I can use the garage as a cooler for beverages!
I know those little cakes would keep ME happy!

I haven't baked a single cookie this year, I guess it is just too warm and rainy here, even if it isn't close to how warm it is where You live.
