I sure wish we had the weather to go with this recipe. We are going to be in the 70's for the next few days. Strange, strange weather. I made homemade hot chocolate and marshmallows to give to my little friends.
I don't think the weather will stop them from drinking it.
You can find my marshmallow recipe here: http://octoberfarm.blogspot.com/2009/10/homemade-marshmallows.html
To make the hot chocolate mix, pour 2 cups of sugar into your food processor bowl. Add 1 cup of good dark cocoa powder, 2-1/2 cups of powdered milk (low fat to keep it from clumping) and 2 T. of cornstarch. Add 6 oz. of chopped dark chocolate and 1/4 tsp. of vanilla extract. Pulse until you have a fine powder.
When you are ready to serve it, fill a cup about 1/3 full of the cocoa mix and add boiling water. Stir until it is smooth and all lumps are gone. Add as many marshmallows as you can!
Btw....the kids ate every bit of the inside out ravioli yesterday. It is now their favorite dish. They said is is bomb. So now things are no longer 'the bomb', they are just bomb. Just to keep you up on teenage lingo!
