Corn Cakes

This is what I made with the leftover oven roasted corn I showed you the other day and they sure are good.                        
 Ingredients:



  • 3-4 cups of leftover corn
  • 4 green onions
  • 1 jalapeno pepper, minced (optional)
  • 2 large eggs
  • 1/4 cup milk
  • 1 cup shredded Monterrey Jack cheese
  • 1 cup self rising flour
  •  Minced fresh cilantro
  • Salt and pepper to taste





  Mix the sliced green onions and jalapeno with the milk, cheese, cilantro, self rising flour, salt and eggs. Mix to combine. Melt some butter in a non stick pan over medium heat. With a large spoon, Form patties and place them in the pan. Fry until both sides are golden brown and the centers are cooked. They should be golden and crisp.

Serve them with some lime wedges.

Couldn't eat the corn on the cob with my teeth but these corn cakes are right up my alley. YUMMY!
I can do this!! (I sound like "the little engine that could," for pete's sake!!)
Grandma used to make these for breakfast..Grandaddy put maple syrup on them...
