Dan Dan Noodles

I made this for my kids yesterday for lunch.  They really love these noodles.                                                                                          
  • 1 lb. spaghetti cooked al dente
  • 2 cups chicken stock
  • 1/4 cup soy sauce
  • 1 tablespoon gochujang (you can find this at the Asian market) or sub hot sauce
  • 1 tablespoon cornstarch
  • 1/2 cup creamy peanut butter
  • 2 tablespoon brown sugar
  • 2 tablespoon rice vinegar 
  • 1 tsp. fish sauce
  • 2 tablespoons sesame oil
  • 2 pounds ground pork or beef.  I used pork.
  • 1 block of pressed firm tofu, cut into cubes
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 cloves garlic, minced
  • 2 tablespoon freshly grated ginger
  • 1 cup fresh, chopped cilantro
  • sliced green onions 
  • lime wedges
Saute' the pork with the ginger and garlic in the sesame oil.

Add the salt and pepper.

Add the stock, the gochujang, soy sauce, peanut butter, fish sauce, brown sugar, corn starch and the rice wine vinegar.

Cook it over med/high heat stirring until it begins to thicken.

Add the cubed tofu and sprinkle in the chopped fresh cilantro.  Mix in the cooked spaghetti.

Serve it with lime wedges and sprinkle the sliced green onions over the top.
