Garlic Scapes

If you grow your own garlic then you know it is garlic scape season.  Not long before you harvest garlic, it puts out these curly green beauties that are such a treat.  What can you make with them?

How about garlic scape breakfast sandwiches?
 Dice a bunch of the scapes and saute them in a bit of butter until they just begin to soften.  Don't overcook them because you want to retain their fresh scape flavor.

 Saute some pancetta until it is crisp.

Drain it on paper towels.
Shred some cheddar cheese and place it on a few buns.  You can use store bought or make your own.

 Pour some beaten eggs over the scapes and add some cracked pepper and sea salt.

 Fold the omelet over and cut it into sections.


 Place a piece on top of the cheese on each bun and top it with some pancetta.


 I spread a little mayo on the buns too.

Wrap them in waxed paper and they are ready to go.  What do you make with scapes?

I add them to cous cous, salads and this morning to the home fried potatoes. I also love them diced thin in egg salad sandwichs. Your idea is fabulous!

Now we're talking. That is one glorious breakfast sandwich. I use garlic scapes in my clam sauce.
Mmmm, I could go for one of those sammiches RIGHT NOW for breakfast!

I'm with Debra - I want one RIGHT NOW! This is a great idea - I usually make garlic scape pesto but have tons of them left over. This is definitely going in the 'to-try-pile'.

I knew we could make breakfast sandwiches, but not ones with such style. And with garlic as well! That is a great start of the day, although for some people close to you they might find the day long. Unless they all eat the same breakfast sandwiches. That's the thing with garlic: everybody has to eat some then nobody is a pariah.

I love them so much! Worth growing garlic just for the scrapes! I just have them steamed with veg and a dot of butter on top.
