A Crustless Quiche

 This is  quick meal for people who are not eating carbs or eat gluten free.  A crustless quiche filled with veggies and a zucchini crust.
The recipe:

6 large eggs
1 onion diced
2 garlic cloves minced
6 mushrooms diced
2 cups fresh spinach
1 zucchini
1-1/2 cups cream (I used milk)
salt and pepper
1/2 cup of grated parmesan
1 cup of shredded cheddar

Saute the onion, garlic and mushrooms in 2 tablespoons of butter until softened.  Stir in the spinach and cook a bit until wilted.  Season with salt and pepper.  Set aside to cool.  Slice the zucchini into thin rounds and line a pie pan with them( spray the pan first with cooking spray). Whisk the eggs with the milk and some salt and pepper.  Whisk in the cheeses.  Stir in the cooled onion mixture. Pour this into the pan covering the zucchini slices.

Cover the top with some tomato slices and layer on some pepperoni slices.  Bake in a 350 degree oven for about an hour until it no longer jiggles in the middle.  Let it cool for about 20 minutes before slicing.  I can't show the cut photos because I gave this away.  I was told it was excellent though.
