Chocolate Zucchini Cake

This is one way to use your abundance of zucchini that most people like. Make a chocolate zucchini cake.                               
 The ingredients:

Cake
  • ½ cup butter, room temperature
  • ½ cup vegetable oil
  • 1¾ cups granulated sugar
  • 2 tsp vanilla
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp salt
  • 2 eggs
  • ½ cup sour cream
  • 2¾ cups flour
  • ¾ cup cocoa powder
  • 3 cups grated zucchini
  • ¾ cup semi sweet chocolate chips
Mix this all together and pour it into a greased 9X13 pan.  I also lined mine with parchment.  Bake at 325 degrees for about an hour until a toothpick stuck in the middle comes out clean.

This is very dense and moist.  Frost with your favorite frosting after it cools completely. I made a vanilla buttercream by beating 1/2 C. butter with 4 T. of milk, 1 T. vanilla extract and 1 pound of confectioners sugar.  I keep this cake in the refrigerator.

There is NOTHING moister than a chocolate zucchini cake! Plus it's the best way to eat zucchini, in my opinion.

I once asked my adult son " do you like zucchini?", because I had a bunch from the garden. His answer was " yes, when it is in a chocolate cake" The best cake, I make in loaf size and mini individual too and freeze.

Love this cake. I make my grandchildren zucchini brownies with chocolate chips and they love them. Your cake looks so good!

I just bought a 1:1 flour substitute from KA. I'm excited to try some of your baking recipes, but I expect they will not turn out as well for some reason....
