Cincinnati Chili

This is what I made for the after school kids yesterday.  None of them had ever heard of Cincinnati Chili before and now they will never forget it.  This has always been a favorite of The Blog Tech and his sister so I was sure the kids would like it too.  I pulled this pic off of pinterest because I never had a completely assembled bowl since I took it to the kids.

 The recipe:

Ingredients
  • 1 (6 oz) can of Tomato paste
  • .5 oz dark cocoa powder
  • 1/4 cup chili powder
  • 1 tsp cinnamon
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1/4 tsp allspice
  • 1/4 tsp ground cloves
  • 1/4 tsp red pepper flakes
  • 1/8 tsp black pepper
  • 3/4 tsp salt
  • 1/2 tsp sugar
  • 2 Tbsp apple cider vinegar
  • 5 cups water
  • 1 1/4 lb lean ground beef
Instructions
  1. Add the 5 cups of water in a large pot.
  2. Add the tomato paste and chocolate and heat over medium heat stirring to combine for about 3 minutes.
  3. Add the spices.
  4. Add the ground beef.
  5. Turn heat to high to bring to a boil.
  6. Once boiling, turn the heat down to med-low.
  7. Cook, uncovered, for 1 to 1 1/2 hours, at a low boil.. stirring occasionally until sauce has thickened quite a bit.
  8. Serve over spaghetti.

*Optional toppings include shredded cheddar cheese, diced white onion.
I made 8 pounds of garlic butter spaghetti to serve the chili on.  I diced lots of garlic and placed it in the bottom of a slow cooker with butter, salt and pepper.  Then I threw in the drained spaghetti and tossed it to coat it.

I shredded a bunch of cheddar cheese and diced lots of onions.

Here is another pic from pinterest.  The Blog Tech said the kids devoured it.  Every one of them assembled it as instructed too.  At this point, if The Blog Tech tells them something is good, they listen to him! 18 quarts of chili and 8 pounds of pasta and there wasn't a drop left.

I've heard of it, but never eaten it. Looks good and makes a big amount for those hungry kids.

That is my FAVORITE chili of all time! When I was a twenty-something, it was also my favorite hangover-cure. But don't tell your kids that... :)

This is timely - I read "Eligible" this week, which has a bit about Cincinnati chilli in it and I was so intrigued!

I bet they loved that! I have 4 year old twins who've been requesting Cinn. Chili since they could speak.

0.5 oz of cocoa? Which is something like a pinch? Tip of a teaspoon? I am sorry if this is a stupid question but I m a bit unfamiliar with your metric system.
