Pierogi Casserole

I have been making a fire almost every night.

I'm enjoying every minute of Fall.

It's really expensive to cook for the after school kids.  I'm trying to be more economical this year and am trying to figure out recipes that I can make which are less expensive, feed a lot of people and are still very very good.  This is one of them.  First, I made a big pot of mashed potatoes with fresh chives, butter, cream cheese and some cheddar cheese.  Add salt and pepper to taste.

I fried 3 # of bacon and then minced it.

Boil 2 # of lasagna noodles. Spray a slow cooker with cooking spray and place a layer of the noodles across the bottom.

Spread a layer of potatoes over them and sprinkle it with some potatoes, bacon and grated cheese.

Continue to layer, using all the rest of the noodles and potatoes.

Cover the final layer of noodles with sauteed onions.

Top the onions with cheese and bacon.  Set the cooker on 225 degrees and let this cook for about 5 hours.  I can't show the finished dish because it went to work with The Blog Tech.  He said the kids devoured every last bite.  I think this will be a new favorite.  They said it was FIRE!
I sent along two loaves of rosemary bread with a tub of Amish butter we bought at a festival last weekend. These kids sure can eat!

Very interesting recipe.

Chicken and rice is a good one too for cold weather. And it makes a lot. Boil up a chicken, debone it. Add it back to the pot with the broth, onions, celery and rice. Cook until the rice is done and it's made a thick stew.

A box of crackers and good to go.

I bet those kids love you :)
I'm sure you know these are called "lazy perogies" in Canada!

That's still not cheap! 3 pounds on bacon alone. How about Haluski. or anything with cabbage. with homemade noodles or spätzle. Yummy!
You are so kind to feed them.

This is a must try!

I must renovate my fire stove but as soon as that is done I'll start baking rosemary breads again :-)

Have a great day!

Christer.

Too blasted warm for a fire here..but..it's at least been in the 60's in the mornings. This morning...oh joy, it was 58! I come alive this time of year..and glad to be alive! You know? (Of course you do!) :)
