Potato Sausage and Cheese Soup

 Cooking for 30 kids a day causes me to constantly come up with new recipes.  I made this soup for the after school kids tomorrow. I sure as shit hope that Trump doesn't cut the program for these kids.  Not that I am funded to do this but for 3 hours every day after school these kids get help with homework and have a safe place to socialize.  I just supply them with a hot meal.  So fingers crossed that this program doesn't get canceled.
While I was making this soup, I wasn't sure how much the kids would like it.  It turns out it is now their favorite soup.  I made 18 quarts of this and more than half had been eaten in less than half an hour.  They polished the rest off during their break.
 Here's the recipe which serves 6:

1 diced onion
2 diced celery stalks
2 diced  carrots
4 cups cubed potatoes
1 pound Italian sausage
3 cups chicken stock
1 cup cream
1 cup grated cheddar cheese
salt, pepper and 1/2 tsp. of dried thyme

Saute' the onion, celery and carrots in a couple tablespoons of olive oil.  Brown the sausage separately and set it aside. Add the chicken stock and the potatoes and bring to a low boil and cook until the potatoes are almost tender. Add the salt and pepper to taste and the thyme.  Taste the broth and adjust the seasoning.  Depending on your stock, you might want to add a bit of chicken bouillon.  Add the sausage, 1 cup of heavy cream and 1 cup of grated cheddar cheese.

I hope your group of kids can continue to have their safe space (and amazing food). Kids need all the help we can provide. That looks like pure, unadulterated comfort food. I could tuck into a bowl (or five) of that myself!

Long time since I ate potato soup, think it was my grandmother who made it that time so over 25 years ago :-)

I do hope the program is left alopne, we all need one place where we can feel safe.

I was always under the impression that the general area around which you live has been Democrat for decades, (with the usual results) but you're going to blame the Republicans if the situation continues to deteriorate?

If voting straight Democrat is so wonderful, why then does your city and surrounding area even need to depend on Federal govt funds?

I have family in Lorain, and we have this discussion over and over again.

My aunt is also an amazing cook and has a heart bigger than Texas, so you share many qualities.

Why does anyone feel the need to leave a negative comment? Trump's name could have been replaced by Hilary or Joe Doe and the meaning is the same - please, government, don't end programs like this. OUR American children need safe havens and food. Chill out, people.

Some people just don't get it....politics has everything to do with everything we do. Like it or not, that is the way it is. Keeping one's head in the sand doesn't make it all go away.
Getting good, nutritious food to children is a wonderful program. . Hopefully, it will continue.
