Brownies Three Ways and Potatoes and Ham au Gratin

 I made the after school kids 3 types of brownies yesterday.  I used one basic brownie recipes but in one batch I added coconut and milk chocolate chips.  In another I added chocolate mint candies and in the third I added marshmallows.

They were gooey and the kids loved them.
 The kids like everything I make for them but once in a while I make something that becomes an instant favorite.  These potatoes and ham did it for them.

The recipe:

  • 4 whole Russet Potatoes, Scrubbed Clean
  • 2 Tablespoons Butter, Softened
  • 1-1/2 cup Heavy Cream
  • 1/2 cup Whole Milk
  • 2 Tablespoons Flour
  • 4 cloves Garlic, Finely Minced
  • 1 teaspoon Salt
  • Freshly Ground Pepper, to taste
  • 1 cup Sharp Cheddar Cheese, Freshly Grated
Preheat oven to 400 degrees.

Smear softened butter all over the bottom of a baking dish.

Slice potatoes, then cut slices into fourths.

In a separate bowl, whisk together cream, milk, flour, minced garlic, salt, and plenty of freshly ground black pepper.

Place 1/3 of the potatoes in the bottom of the baking dish. Pour 1/3 of the cream mixture over the potatoes.

Repeat this two more times, ending with the cream mixture. Cover with foil and bake for 30 minutes. Remove foil and bake for 20 minutes, or until potatoes are golden brown and really bubbling. Add grated cheese to the top of the potatoes and bake for 3 to 5 more minutes, until cheese is melted and bubbly.

Allow to stand for a few minutes before serving.

The above recipe instructs how to prepare it for the oven.  Since I made 5X the recipe, I prepared them in my Nesco roaster like the old woman I am.

They worked perfectly in the roaster so I'm sure you could adapt these to a slow cooker easily.

Depending on how much ham you add, these can be a main meal.

I only have food enough to last me and the cats until tomorrow morning :-) So today I'll have three frankfurters with pasta. I really need to fill up my pantry and freezer again :-)

the ham and potatoes look yummy it's true. but GOOEY brownies would top my list. They sound scrumptious for sure.
