Here's a blast from the past....clams casino. I hadn't made these in years but my daughter's boyfriend mentioned how much he likes them and I just happened to have a bag of little necks. I happened to have clams which I bought to use to get Teddy to take her pills. I never had to use them since the liquid smoke on the ground lamb worked like a charm! She takes her last pill tonight. Phewwww! These pills sure made her sick. |
Normally, I would use a larger clams but these worked fine. Melt a bit of butter in a heavy pot, add 1/2 cup of white wine, 1/2 tsp. of thyme, 3 cloves of minced garlic, S&P and 3 diced shallots. Bring this to a boil and toss in the clams. Cover the pot and cook for a few minutes until they open. Remove the clams and strain the liquid through a fine sieve and reserve.
These are out of order but before you start, fry some bacon. Set the bacon aside and reserve the grease. Saute' a diced sweet onion and a diced red pepper in the grease. Add 3 more minced garlic cloves. Once the vegetables begin to soften, stir in 1 T. of butter and set aside to cool.
Dice a bit more red pepper, some prosciutto and the bacon. I added a bit of minced ham too. Stir this into the onion mixture.
Remove the top shell, leaving the clams in the bottom shell and place on an oven proof pan.
Mound some of the mixture on top of each clam. Top that with some panko which you mixed with diced fresh parsley and melted butter.
Place a piece of bacon on top of each one and broil them until the crumbs begin to brown.
