Chocolate Walnut Cookies

I made this new recipe for my husband this morning.  He is very happy to be my cookie guinea pig.
 Each cookie weighs 6 ounces.

They are crisp on the outside and gooey on the inside.

The recipe makes 9 cookies.

 The recipe:

  • 1 cup cold unsalted butter, cut into small cubes
  • ¾ cup lightly packed light brown sugar
  • ½ cup granulated white sugar
  • 2 large eggs
  • 1 cup cake flour
  • 1¾ cup all purpose flour
  • 1 tsp cornstarch
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 cups roughly chopped walnuts
  • 2 cups semi sweet chocolate chips
Mix the butter with the sugars until fluffy then add the eggs.  Add the dry ingredients and mix, then add the walnuts and chocolate chips.  Mix just until combined.  Weigh them out at 6oz. each and place them far apart on a parchment covered baking sheet.  Cook at 400 degrees for 13 minutes.  Let them sit on the sheet to cool for 15 minutes before trying to move them.  After 15 minutes, remove them to a rack to cool to warm.  These are best eaten warm.

They look delicious. I would have to triple that recipe because nine is not enough.
After the Oilers' loss last night, I need to eat a WHOLE BATCH all by myself.

Holy Moly those look delicious!!! I have to make those, I love the combination of chocolate and walnuts...mmm! Joyce, quick question, you use skins of onion and garlic in your broth? Dang, I threw mine away into the compost (newbie!), I need to keep them. Do you wash all that first?
