Amish Cottage Cheese Dill Rolls

I made these rolls for the first time the other day and I certainly will be making them a lot more.
The recipe:
12 medium size rolls or one standard size loaf of bread

2 and 1/2 cups bread flour
1 and 1/2 tsp. rapid rise yeast
1 Tbsp. dried onion flakes
1 generous tsp. kosher salt
2 T. fresh diced dill
1/4 tsp. baking soda
1 C. cottage cheese
1/3 cup warm milk
2 Tbsp. honey
  2 T. unsalted butter, softened
1 egg, large

1/4 cup melted unsalted butter to brush onto rolls before and after baking.

Mix all of the ingredients and knead until you have a smooth ball of dough.  Place it in a buttered bowl, cover and let rise until doubled.  Form them into rolls and place on a parchment covered cookie sheet, brush with butter and let them rise until doubled.

Place in a 350 degree oven and bake for 30-35 minutes until golden.

Cool on racks.  These freeze very well.
