Meatballs with Jalapenos

I made my kids a bunch of jalapeno meatballs this morning.  they have been on a real meatball kick lately.  They eat them in salads but mostly they just eat them plain.  Meatballs are a big thing in restaurants right now.  They are offered with different seasonings and different meats.  Who doesn't like a good meatball?
Right now I have a ton of peppers especially jalapenos.  It's been a good year for peppers.  I decided to add some to this recipe.  If you cut the membrane out and remove the seeds, these add no heat.
This recipe makes 70 meatballs.  Mix 2 pounds of ground pork with 1 pound of ground beef.  Add 5 eggs, 2 cups of bread crumbs, 1 T. oregano, 1 tsp. salt, 1 tsp. pepper, 2 T. minced parsley, 1/3 C. milk, 1 grated medium onion,  1/2 C. parmesan cheese, 6 cloves of grated garlic mixed into 1/3 C. melted butter. I added 3 minced jalapenos to this.

Mix this loosely and form them into 1 inch balls.  I use an ice cream scoop to do this.  Place them on a greased cookie sheet and bake them for 23 minutes in a 350 degree oven.  Let them sit for 5 minutes or so before serving.  These freeze well too.

They also make great sliders when placed on small buns and topped with provolone cheese.

I am hoping to have excess jalapenos (is there such a thing?) and I will definitely add them to meatballs. I love meatballs and keep them in the freezer for those nights when I don't feel like cooking.

Squeeeeeeee! You had me at jalapenos, woman. I am a fire eater. It comes from living in El Paso near the Tex/Mex border for close to 36 years. My brother and I were the only two fire-eaters in the house and I was the main fire-eater cook for the both of us. My mom, dad and sissy siblings hate hot or spicy food.
I haven't made meatballs in ages. I think I should!

Oh wow! This looks very delicious. I'm afraid I just bought some ready-made chicken meatballs today from Costco. Sigh... I wish I could cook like you.

When you say ground pork -- do you have regular pork grounded or do you use sausage....
