Covering them in bacon adds such good flavor. I forgot to take a pic of them finished but they looked great. BTW...I always use thin sliced bacon so it cooks thoroughly.
I made my white Maritime bread for these. This is the easiest loaf to make and is perfect sandwich bread.
The recipe:
Pour 1 C. of warm water in the bowl of your mixer. Add 3 T. of sugar, 1/4 C. of softened butter, 1 T. rapid rise yeast, 3/4 tsp. salt and 3 C. of flour. Beat it until it comes together into a smooth ball. Knead it in your mixer or by hand for about 8 minutes. Place it in a buttered covered bowl and let it rise for about 1-1/2 hours.
Form the punched down dough into a loaf and place it in a buttered loaf pan. Cover it and let it rise until doubled which will take about an hour. It should be cresting the top of the pan.
Bake it at 350 degrees for about 40 minutes.
It should sound hollow when tapped.
I rotate the pan halfway through the cooking time.
Cool it on a rack.
I added thinly sliced onion, crunchy lettuce and cheddar cheese slices to the sandwich. Normally I would slather this sandwich with mayo but it is kryptonite to my husband....go figure! His was served with HP sauce on the side. The Chef got mayo and lots of it!

David is the same way. He loves my Friday night meatloaf and even better for lunch on the weekend in the form of melted cheese on top in a sandwich.
