Italian Wedding Soup

The Chef likes Italian wedding soup a lot so I told my daughter I would make him some the other day.

 I used frozen stock I made a while back.


 And I made lots of tiny meatballs...this is just a fraction of them.

 I made some chicken breasts and cubed them and added them too.  Some people make it with out chicken and some make it with just chicken but I like to use both.

 You can use spinach or escarole.

 As I made it I realized The Blog Tech and his wife would want some too so I doubled the recipe.  I pulled out the last of my frozen stock which is sad because it's the stock I made with the last chicken I roasted for Teddy. I wonder how many chickens I roasted for her in 12-1/2 years?  At least one a week....that's a lot of chickens.

Sprinkle with grated Parmesan just before serving.

I thought I knew how to make this soup until I got to the egg and parmesan step. Then I had to check the link. This looks seriously good. And what an intriguing pot in your original post!

Oh- Such a good soup! It is one we really love, too. I am sure it was sad using that last bit of stock and remembering where it came from.

Everyone should raise a spoon of that soup in tribute to Teddy before tucking in and enjoying it! Gosh, it's been ages since I've had Italian wedding soup.

i chill the stock and then put it in a ziplock bag, squeeze the air out and freeze it.

Thanks! I currently have them in old yogurt containers and I'm trying to find a more space-friendly method! :)

Such a lucky pup, that Teddy. You were an excellent dog mom. It's funny how now, after starting my homesteading-type journey, I cannot bear any stock but homemade. That soup looks so delicious! Soul food...

I have never made or eaten Italian Wedding Soup, but daughter tells me it is delicious. She is from the South, too, but moved to NYC and married into Italian family. They like her Southern food, too.

Wow, the food looks so yummy and tasty. After seeing the food photo I cannot resist my tongue. Very well captured along with the editing work as it seems so yummy.
