Navajo Cornbread

My husband loves cornbread so he was very happy when I made this for him yesterday

NAVAJO CORNBREAD

1 cup of cream style corn
2 eggs
1/2 cup sour cream
1 cup milk
1/3 cup canola oil
1-1/2 cups yellow cornmeal
3 teaspoons baking powder
1/4 cup of jalapenos diced very fine
1 tablespoon salt
1 cup grated cheddar jack cheese
1 cup green onions, chopped
6 slices cooked bacon , diced

 Whisk all of the liquid ingredients together and then stir in the dry ones.  Mix in cheese, onions and peppers.

 While you are making the batter, preheat your oven to 425 degrees.  Place a cast iron pan in it while it is heating and add several tablespoons of butter.  Once the oven reaches 425, remove the pan and pour the batter into the sizzling butter.  Bake for 45 minute to 1 hour until set in the middle.


Let it rest about 15 minutes before cutting.  I'm using leftovers to make him savory French toast with fried eggs.

I love this and have made something very similar-but without the peppers and I use whole corn rather than the cream of corn. I think I need to try your recipe! xo Diana
Ooooo, your recipe is better than mine! I must try yours next time. I don't make cornbread all that often though, unfortunately, largely because My Rare One doesn't like it so there's no one to help me eat the whole batch. Not that I CAN'T eat the whole batch myself; it's just that I shouldn't.

Cornbread isn't especially common here but I have made it once but it came out a bit dry. The taste was good though. Perhaps I should try it again?

Oh my goodness . . . this looks amazing. I am copying this recipe and I want to use it the next time we go camping. My husband loves cooking over the campfire in dutch ovens . . . so he can make the stew, chili or ham and beans and I'll be in the 5th wheel baking up a batch of your corn bread:) Just thinking of it makes me want to reserve a camping space, already and it's just February :)
