Chicken Tortellini Soup

 Winnie is a messy eater!  She is messy with everything but especially with her daily yogurt mixed with cottage cheese.  She gets it everywhere.  Though she does try to lick it all up with her black tongue.  Click for a closer look.

 She always ends up with a little on her chin.

 This is all I have managed to cook in the last 3 days.  It's a very easy, quick soup to make which is a hearty meal when served with crusty bread.

Ingredients
  • 2 Tablespoons butter
  • 1 small white onion, diced
  • 3 cloves garlic, minced
  • 2 stalks diced celery
  • 1 diced carrot
  • 4 cups chicken broth
  • 28 ounce can diced tomatoes
  • 1 15 ounce can white beans, drained and rinsed
  • 1 cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 Tablespoon Italian seasoning
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 2 cups cooked and diced chicken
  • 9 ounce refrigerated tortellini
  • 2 cups spinach
Instructions
  1. In a pot over medium heat,melt the butter. Add onion and garlic and cook until tender. Add the celery and carrots and cook a bit longer. Add chicken broth, diced tomatoes, white beans, heavy cream, Parmesan cheese, Italian seasoning, salt and pepper. Bring to a simmer.
  2. Add the chicken, tortellini, and spinach. Let simmer for 10 minutes to thicken up and for the tortellini to cook. * I added some cooked sweet Italian sausage too.
 Winnie is on the mend which, though I am thrilled, the real work has set in.  I can't let her out of my sight.  I'm taking no chances that she can reach these stitches!  Even with the neck pillow, she can scratch them with her back feet.  Yesterday she tried to jump over one of the barricades. Almost gave me heart failure!

Isn't it amazing what dogs can come up with when it comes to stitches :-) :-) They always figure out that one way they can reach them.

My dog gets Kefir every morning. She has to take medication and it dissolves in the Kefir and she doesn't know she is taking it! Love the soup recipe - thank you for posting it! Winnie is growing!

I cannot lick yogurt off my chin, either. That soup looks delicious. I can almost smell it. I cannot have cooked spinach. Do you think kale would work?

the soup sounds good. winnie likes to jump. that would give me heart failure too. got to protect those stitches.
