Quarantine Day #14, Two Weeks, Garlic Honey Salmon


I made this for dinner yesterday and I think it might be some of the best salmon I've ever eaten. Here's the recipe:

Ingredients

  • salmon, cut into strips
  • seasoned salt
  • black pepper
  • 4 tablespoons honey
  • 2 tablespoons warm water
  • 3 teaspoons apple cider vinegar
  • 2 tablespoon2 olive oil
  •  6 cloves garlic, minced
  • 1 lemon, sliced into wedges

Instructions


Mix the honey, water, apple cider vinegar, garlic and a pinch of salt together. Stir to combine well.

Cut your salmon into pieces as you see in this pic.  Remove the skin if you wish. Dry the salmon and sprinkle with some pepper and seasoned salt.

Cook it top side down over medium-high heat in some olive oil in a non-stick pan for several minutes until a crust forms.  Flip them over and cook for an additional couple minutes.  Add the honey/garlic mixture and the lemon slices and continue to cook until it starts to bubble and thicken.


Gently turn the salmon pieces over to coat them.  Remove and serve.  Pour the sauce over the salmon.


I made this gratin to serve on the side.  Cut a couple potatoes into large slices.  Do the same with a head of fennel and one large onion.  Simmer these in salted water for 10 minutes then drain. Mix with 1/4 cup of garlic butter or regular butter.

Spread them out in a butter coated pan.

Sprinkle with Parmesan cheese and salt and pepper.

Bake this in a 425 degree oven for 45 minutes to an hour until turning brown.

The casserole is a perfect accompaniment for the salmon.

Next quarantine, I'm coming to your house, LOL. This looks delicious. Last night my husband made pork chops with onions, apples, raisins, and cinnamon. Tonight it is leftover roulette.
Screw the salmon, gimme those spuds!

my absolute favorite food of all time is salmon. i love it so much i could eat it every night. your recipe sounds delicious. those potatos look darn good too. i'm so hungry after reading your blog.
