The next time you have a burger craving, make yourself a smash burger.
If you are a burger fan, you should try making them this way at least once.
I used the buns I made yesterday.
I spread them with ramp butter and toasted them. You can just use plain butter or garlic butter.
Use 4 ounces of ground beef and smash it between 2 sheets of wax paper. It should be very thin. Use your frying pan to smash it.
Peel off one piece of the paper and season with salt and pepper.
About an hour before you make the burgers, slice an onion very thin and place it in a bowl and sprinkle salt on it. Squeeze it and rub it to distribute the salt and let it sit for an hour.
When you are ready to cook the burger, drain the water from the onion and dry it on a paper towel. Heat a griddle or cast-iron skillet over medium-high heat and add the onions. Push them off to the side and flip your burger into the pan and peel off the wax paper. Cook the burger for about 4 minutes and toss the onions around to brown them.
Scoop the onions out and place them on the toasted bun.
I missed a pic but add some cheddar or American cheese on the burger and fold it in half. let it cook for 2 more minutes.
Place the burger on the bun and add ketchup, mustard and mayo. Add some good dill pickles too.
Add some crunchy lettuce. You can use fewer pickles. I happen to have a pickle problem.
Maybe it's called a smash burger because you smash it into your mouth.
