The Chef had to work at his old restaurant a couple days ago. Restaurants are crazy trying to provide food during this pandemic. We have gone back to no indoor dining again. It's all outside or takeout. When the staff heard that he was coming back for a few days, they all sent out requests for some of my food. Meatball subs and rice krispie treats were what they wanted. So, I made trays of meatballs and lots of sub rolls and marinara sauce.
First I toasted the buns with scape butter, then I add some mozzarella cheese and broil them until the cheese melted. Then I add as many meatballs as will fit and drizzle a bit of sauce on top of them. I don't like to drown them in sauce as it overwhelms the other flavors. I add just enough to give it a slight tomato taste. Next, I cover the meatballs and sauce with slices of provolone cheese and brush them with more scape butter. You can use garlic butter instead. I broil them again until the provolone melts. Then they get sprinkled with grated parmesan and sprinkled with Italian seasoning.
Lined up and ready to go.

I made them a mountain of brown butter and sea salt rice krispie treats.
The Chef and My Daughter got married yesterday. The Blog Tech married them and his wife decked their home out in flowers. Ziggy got to be a witness. I shipped in lobster from Maine and they had a great time. It was a wedding for the books and one they will never forget. I love that they wanted The Blog Tech to marry them. It's so much better than having some stranger do it.
