Breakfast Casserole


 This is a delicious breakfast casserole that you can throw together quickly and is loved by all.  You can prepare it up to the point of baking and then put it in the fridge overnight and bake it the next morning.  It is my 'go to' Xmas and Easter morning breakfast because it gives me the time to work on the holiday meal.  You can use any leftover bread and cheese that you have on hand too.


Recipe:

10 slices white bread (or equivalent in leftover bread)
6 large eggs
3 cups milk
2 T. snipped parsley or any other herb that you like.  Chives are good.
1 tsp. dry mustard
1 tsp. salt and 1/2 tsp. pepper
2 cups shredded American cheese  ( I use cheddar, use what you want)
3 T. finely chopped onions (I use one medium onion)

Pour this into a buttered 10X13 pan.  Drizzle with melted butter.  Bake at 350 for 1 hour or until it no longer jiggles in the middle.  Remove from oven and let sit for 15 minutes before serving.

I never thought of a casserole as breakfast, but it makes sense.

Looks wonderful. I suppose you tear the bread into pieces, big or small? mix it in whole slices? Will have to try this. We made something similar a few times but with potatoes and some ham. I like this idea.

Thanks for the recipe. This looks simple enough and I like simple. My husband loves breakfast casseroles and asks me to make them all the time. I have never used bread in a breakfast casserole before though. I'm definitely going to try this.
