Vegetable Loaf

This morning, I made my daughter's favorite vegetarian recipe, a spinach, brown rice and mushroom meatloaf. It is wonderfully flavorful, easy to make and something a bit different to add to your menu. Ingredients: ½ cup brown rice, dry 2 tablespoons olive oil 1 large yellow onion, chopped 2 garlic cloves, minced 2 celery ribs, chopped Kosher salt Freshly ground black pepper 10 ounces crimini mushrooms, stems removed, sliced thin 1 tablespoons fresh tarragon, chopped 6 ounces fresh spinach 3 ounces sun dried tomatoes, chopped 4 eggs, whisked 1 tablespoon Dijon mustard 2 tablespoons vegetable broth Instructions Preheat oven to 400F. Cook rice according to package instructions. Set aside. Meanwhile, in a large skillet, heat olive oil over medium high heat. Add onions and cook until translucent. I have a couple older friends that go on a cruise each year for the holidays so I held a dinner party for them last night so we could see them before they leave. They were reminiscing about how they used to do the Carnival Cruises where they held wet t-shirt contests and competitions for who had the most chest hair. The cruises they take these days make unexpected stops in ports to 'drop off the ones that didn't make it'. I was reminiscing about my beauty marks. They've mysteriously turned into witch warts. It's amazing how long you go through life with old age looming in front of you but you never even notice it. Then suddenly you find yourself wondering if you will make it to see the last episode of "This Is Us". I find myself amazed that one day it is Monday, and then in the blink of an eye, it's Sunday again. Refrigerator Cucumber Salad

This is a fabulous salad and will be great to serve during hot weather. I found cucumbers on sale 3 for 1.00 so I made this for the shelter. I will give you the recipe in which you use 4 cucumbers. Bring 2 cups of white vinegar and 1-1/2 cups of sugar to a boil along with 1 tablespoon of salt, 1 teaspoon of celery seeds and 1 teaspoon of red pepper flakes. Boil it until the sugar dissolves then turn off the heat. Throw in 2 cups of ice cubes and let them melt. Thinly slice 4 cucumbers, 1 large red onion and 1 large green pepper. Pack them tightly in a jar. Pour the liquid over them and close the jar. These will keep for a couple months in the fridge. I tucked in some garlic cloves and fresh dill as well.
