Pan de Queso

Pan de Quesos are sort of a Brazilian cheese bagels.  I've wanted to bake them for some time and finally got around to it.  They are wonderful straight from the oven.
Mix 1 C. of flour with 1/2 tsp. salt, 3/4 tsp. rapid rise yeast and 2 T. of sugar.  Set this aside.  Beat together 1 egg, 2 T. melted butter and 1/2 C. of milk.  Mix this into the flour mixture and knead until you have a smooth ball of dough.  Place it in a bowl, cover it with plastic and let rise until double in size.  It could take a while since there is not much yeast in this recipe.  After it has risen, knead in 3 oz. of a finely grated hard cheese.  I used a combo of asiago and parmesan.

 Divide it into 12 pieces.

Roll the pieces into 10 inch long ropes and form them into circles.  Cover and let rest for 20 minutes.  Brush them with an egg wash and bake them in a preheated 400 degree oven for 8-12 minutes.

 Mmmmm...chewy and cheesey.

The aroma of these baking got someone's attention.

'I think I am hungry mama and something smells good.' (click for closeups)

Do I want to try a cheese roll teddy?

 'Hell yes!!!'

'I bow before you to humbly except one of these rolls.'

 'Or maybe two?'

Teddy thought they were delicious.  I used the leftovers to make breakfast sandwiches for the fam.

I will have to try your recipes with GF flour. It doesn't feel like baking weather! I made some chicken stock the other day and my kitchen felt SO warm!
I love anything with asiago cheese!

Nice that they don't have to be boiled first like bagels.

I don't think I've ever even seen a bagel in my life, they aren't a big thing over here. But I do often mix in cheese in my bread if I have some old cheese left. Sometimes I buy cottage cheese for half price and put it in the freeser and use that instead of water or milk when bbaking bread, tastes just great :-)

Have a great day!
