Tortilla Soup Recipe

If you have never had tortilla soup, you should give it a try.  I had never eaten it until recently.  It just didn't seem appealing to me.  But, we were in a restaurant a while back and a cup of it was served with our meal and I was converted.  It's one of the best soups I have ever tasted.
 There are all sorts of variations so you can use what you like.  I started by sauteing onions, garlic, celery and peppers in some olive oil.  Add 2 tsp. of cumin and 1 tsp. of chili powder.  You could also use a pouch of taco seasoning instead.

 Add chicken stock, about 10 cups. Add some chicken demi glace or bouillon for flavor. Add 2 cans of rotel, 2 cups of diced chicken, 2 cups of corn, 1 can of black beans and one cup of rice.  Simmer this until the rice cooks through.  I added some okra from my garden as well. Taste and add S&P.

Cut a package of corn tortillas into strips and fry them in oil until crisp.  Serve the soup topped with tortilla strips, grated cheddar, montery jack or colby cheese, fresh cilantro an a lime wedge.   Mmmmm, mmmmm!!!

I'm not a big soup person, so I've never tried this. Sounds good, though.
I have not made this soup, but my friend Susan at From Beyond My Kitchen Window has, and I know how delicious it is from her!

I Love Tortilla Soup! This will be a great addition to my Fall menu! BTW check out the catalog "Through The Country Door". They have some very unique Halloween items. You have to go thru the WHOLE catalog as they suddenly pop up. They have beautiful curtains with bats and some other great stuff. You can probably view it online. Maggie

So glad you found me so I could find you! You'll learn over time that I will NOT read recipes. I'll just look at the pretty pictures and hope that someday someone will make it for me. Reading a recipe is just another form of cooking (as is putting a cup of water in a microwave). It's not something I do.
