Denver Omelet Sandwich

The Blog Tech was away for the weekend visiting the love of his life. Isn't it wonderful when your kids fall in love with their soulmate?  I never knew I could be so happy.  Anyway, I wanted to make him a good lunch to take to work today and I came up with this.  It's a perfect way to use your freshly harvested peppers and tomatoes
 I used a green and red pepper, a jalapeno, some Canadian bacon and an onion. Saute it in a bit of butter over medium heat.

 Throw in some fresh tomatoes.

 Sprinkle with salt and pepper.

Beat some fresh farm eggs.  Add to the skillet and cook until it begins to set then roll it into an omelet and top with cheddar cheese. I obviously forgot to take a few pics of this.
I made some herb rolls using fresh herbs from the garden.

Split a roll and spread it with mayo.

 Add some crisp romaine. This keeps the sandwich from becoming soggy.

 Add the omelet and you are good to go.  Very simple but very good.

My husband would go crazy for this. It does look yummy. But then again anything you make and post for us is good.
